Le permis d’exploitation est une formation obligatoire de 20 heures pour tout futur exploitant d’une licence de débit de boissons (licence III et IV), d’une «petite licence restaurant» ou d’une licence «restaurant». Elle donne lieu à la délivrance d’un permis d’exploitation nominatif valable dix ans.
